Cromlix submit plans for new restaurant

Cromlix, the luxury, country house hotel, owned by Andy and Kim Murray, has submitted planning for a new restaurant and kitchen and three new bedrooms.

The new 80-cover restaurant would replace the hotel’s current dining space, The Glasshouse, and will be an extension to the existing footprint of the Victorian mansion, sitting in a new location overlooking the hotel’s back lawn. The Glasshouse will remain a dining space but will be used mainly for afternoon teas and private events.

Three new ground-floor bedrooms will also be created within the main building, converting current kitchen space into an accessible suite and two Cottage rooms. An additional bedroom is also being added onto the first floor, meaning that in total the main house will go from 15 bedrooms to 19 (with a further bedroom in the Gate Lodge).

Cromlix was completely refurbished in 2023 in a project overseen by Kim Murray, renovating all of the bedrooms and bathrooms, creating a new bar area and entrance, upgrading the restaurant and all other common areas of the hotel. Since then, the hotel has seen a significant increase in occupancy levels throughout the year, in both overnight stays and fine dining, and won a number of awards including AA Scottish Hotel of the Year and Independent Hotel of the Year and Chef of the Year at the Scottish Excellence Awards.

General Manager, Barry Makin said, “We’ve had a great 18 months since the refurbishment, with record occupancy, more private events and weddings than ever before, and the restaurant and bar really busy throughout the week and at weekends. Our Executive Head Chef, Darin Campbell, has done a fantastic job in The Glasshouse, introducing a new lighter menu focussing on local, in-season produce and winning a number of awards along the way. Cromlix has become a really thriving business for the local area, and this restaurant and the new bedrooms will ensure we continue to be able to meet demand and give people the chance to experience our wonderful hotel and restaurant for themselves”.

Fergus Purdie, architect, said, “It has become increasingly clear that a larger restaurant is needed at Cromlix, growing the number of covers from around 50 to 80 per sitting. The design for the restaurant features extensive use of glass to allow people to feel connected to beautiful, rural setting at Cromlix, and by incorporating the original wall from the walled garden within the restaurant, it will acknowledge the aesthetic of the existing building.”
