Family-owned Apex Hotels has had a busy few months. It announced the purchase of Dunblane Hydro this week and has re-opened Pine trees in Pitlochry after a complete refurbishment. This comes with the recent purchase of The Vineyard Hotel in Berkshire.
The company bought Pine Trees last year in a £3m deal, and since it has undergone a £5m revamp. Every very detail in the hotel has been crafted to honour Scotland’s rich resources and heritage. Each off its 32 rooms rooms has sustainably sourced toiletries and, along with the bar and restaurant, artwork comes from hand-selected, paintings by Scottish artists.
General Manager, David Lapsley, who is a professional sommelier and former owner of Etive restaurant in Oban, also oversees the new destination bar and restaurant, Flora and Fauna, which will aim to deliver the ‘ultimate in Scottish cuisine’.
The hotel is aiming to provide the best in “Coorie” living, and, says Angela Vickers, chief executive of Apex Hotels, “We are delighted to welcome guests to Pine Trees, our beautifully refurbished country house hotel, and the ultimate Coorie retreat.
