Apex Hotels has announced that its long-standing collaboration with chef and restaurateur Nick Nairn will come to a close in March 2026, marking the end of a successful 16-year partnership at the Kailyard Restaurant at Apex Dunblane Hydro.
The move follows the official reopening of the hotel under its new name, Apex Dunblane Hydro, in late November, part of a multi-million-pound refurbishment programme spanning bedrooms, leisure spaces and event facilities.
Nick Nairn, who has led the Kailyard since its inception, is set to focus fully on his restaurant and cook school at Port of Menteith. The decision is described as mutual, as Apex Hotels begins work on a new restaurant concept set to align with the hotel’s long-term vision.
Paul Mooney, Area General Manager for Apex Dunblane Hydro, said, “Nick’s influence on the Kailyard and on the wider food scene in central Scotland has been remarkable. Over the last 16 years, he has helped build a restaurant that is respected and known for its commitment to quality and Scottish produce. I would like to thank Nick sincerely for everything he has contributed to Dunblane Hydro and wish him every success in the next chapter on behalf of Apex Hotels.”
The restaurant’s evolution is part of one of the most significant investment periods in the hotel’s 147-year history. The upcoming changes include a new name, fresh design, and refined concept, all set to be unveiled in early 2026.
Nick Nairn said, “I’m very proud of all the Kailyard has achieved. However, it’s time for me to focus exclusively on the restaurant and cook school in Port of Menteith. I wish only the best for the Dunblane Hydro and the team. I’ll be a very interested onlooker as Apex invests in and improves the hotel. I believe it’s in good hands and I look forward to visiting as a guest.”
Long-time Executive Head Chef Brian Scanlin will remain in place to ensure continuity and oversee the creative transition. A farewell event is planned for Thursday 26 March 2026, to celebrate Nick’s legacy and contribution to both Dunblane Hydro and the Scottish hospitality sector.
