Exploring Scottish Flavours Through Collaboration

Nestled in the heart of Glasgow’s historic Barras in the vibrant East End, Crossbill Distilling is redefining the art of gin-making. Our journey began in 2012 in Aviemore, and since relocating to Glasgow in 2017, we have continued to perfect the craft, offering an award-winning range of handcrafted Scottish gins that celebrate Scotland’s natural beauty and botanicals.

At Crossbill, we believe that the best gin comes from the land itself. That’s why we source all our botanicals locally from Scotland. Our gin is crafted with just two ingredients: wild Scottish juniper and wild Scottish rosehip. These fresh, hand-harvested botanicals are macerated and distilled in Glasgow, delivering a spirit that is pure, simple, and bursting with the flavours of nature.

We named ourselves after the Scottish Crossbill, which embodies our ethos of sustainability and connection to nature. This small, remarkable bird shares its habitat with the juniper bushes from which we source our key botanical. Much like the crossbill carefully extracts seeds from pinecones, we harvest our botanicals by hand with great care, ensuring the continued health and regeneration.

Seasonal, Fresh & Scottish

Our dedication to local ingredients and sustainability has led us to an exciting collaboration with Hazel by AC Marriott, a stylish boutique hotel and restaurant in Glasgow. Since its opening last year, Crossbill has become their go-to choice for house G&Ts and features prominently on their cocktail menu.

But our partnership goes beyond just serving exceptional gin; we supply Hazel with a unique seasonal release that incorporates the finest fresh Scottish botanicals. This exclusive offering changes throughout the year, reflecting the beauty and diversity of Scotland’s nature in each season.

Expanding our craftsmanship beyond Scotland with our recent venture into Asia through The Asia Gin Collective project. The collaboration is a fusion of traditional Scottish gin-making elements with distinctive Asian botanicals.

Having just been released to the Malaysian market, Gin Malaya Original and Gin Malaya Kantan have received overwhelmingly positive feedback, and are on their way to becoming staples on the drinks and cocktail menus at Marriott hotels across Malaysia.
