Culinary star Tony Singh is set to unite with Apex’s Edinburgh hotels once again to resurrect his street food pop-up in the city.
Tony’s Road Trip offers a blend of Scottish and Indian dishes, scheduled to serve seven days a week, from noon until 10 pm, at two prime locations – The Apex Grassmarket Hotel’s Metro Brasserie, and Apex Waterloo Place Hotel’s Elliot’s Restaurant. It will run from July 24 to September 3, and the pop-up will welcome both walk-ups and bookings.
The menu, which draws from Tony’s world travels, offers a range of affordable options, with most dishes priced under £10. It includes fusion classics such as Haggis Pakora and Chicken Tikka Pie, alongside new, recipes like Korean BBQ Pork Belly and Fish Tacos with crema and Loca Salsa.
Guests will also have the chance to enjoy Fierce Beers personally handpicked by Tony along with Spritz cocktails, bottled and draught beer, and a variety of wines.
Excited about his comeback to the city, Tony said, ” It’s great to be collaborating with Apex Hotels again doing what I love in the kitchen – rustling up tasty street food.”
